Mozzarella & Veggie Snack Box

A quick and healthy snack box with fresh mozzarella and crisp veggies. Perfect for a light meal or an on-the-go snack.

Ingredients

  • 1 cup fresh mozzarella balls
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup bell peppers, sliced
  • 1/4 cup carrots, julienned
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and prepare all vegetables.
  2. Drain mozzarella balls if stored in liquid.
  3. Arrange mozzarella, tomatoes, cucumber, bell peppers, and carrots in a container.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Sprinkle with basil, salt, and black pepper.
  6. Toss lightly before serving or enjoy as is.

Notes

  • Customize with your favorite vegetables.
  • Add a pinch of red pepper flakes for heat.
  • Store in the fridge for up to 2 days.
