Mushroom Lasagna

A rich and flavorful mushroom lasagna that layers tender pasta with a creamy mushroom filling and a cheesy topping.

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  4. Add mushrooms, thyme, and oregano; cook until mushrooms are tender and liquid has evaporated.
  5. In a bowl, mix ricotta cheese, egg, salt, and pepper until well combined.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the mushroom mixture, and a third of the mozzarella cheese.
  8. Repeat the layers, finishing with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  10. Let it cool for 10 minutes before slicing and serving.

  • For a vegetarian option, ensure the marinara sauce is meat-free.
  • Feel free to add other vegetables like spinach or zucchini for extra nutrition.
