  • 1 cup heavy whipping cream
  • Fresh fruit or chocolate for topping (optional)

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  2. Press the mixture into the bottom of mini cheesecake cups or a muffin tin to form the crust.
  3. In a separate bowl, beat the softened cream cheese until smooth.
  4. Add powdered sugar and vanilla extract to the cream cheese and mix until well combined.
  5. In another bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Pour the cheesecake filling over the crust in each cup.
  8. Refrigerate for at least 4 hours or until set.
  9. Top with fresh fruit or chocolate before serving.

  • Make sure the cream cheese is at room temperature for easier mixing.
