One-Pot Chicken Fajita Pasta

A delicious and easy one-pot meal combining chicken, pasta, and fajita flavors for a quick dinner.

  • 1 lb chicken breast, diced
  • 8 oz pasta (penne or rotini)
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 tbsp fajita seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add sliced bell pepper and onion, cooking until softened.
  4. Stir in fajita seasoning, then add chicken broth and diced tomatoes.
  5. Bring to a boil, then add pasta and reduce heat to a simmer.
  6. Cover and cook until pasta is tender, about 10-12 minutes.
  7. Stir in shredded cheese until melted and creamy.
  8. Season with salt and pepper to taste before serving.
