One Pot White Chicken Chili Mac & Cheese

A creamy and comforting one-pot meal combining the flavors of white chicken chili with mac and cheese.

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 cups elbow macaroni
  • 4 cups chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  3. Add onion and garlic, sauté until softened, about 3 minutes.
  4. Stir in cumin, chili powder, salt, and black pepper.
  5. Pour in chicken broth and bring to a boil.
  6. Add macaroni and white beans, reduce heat to simmer.
  7. Cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  8. Remove from heat and stir in cheddar cheese, Monterey Jack cheese, and sour cream until melted and smooth.
  9. Serve hot.
