  • 3 potatoes, diced

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven, heat the vegetable oil over medium-high heat.
  3. Season the beef chuck roast with salt and pepper, then brown it on all sides in the hot oil.
  4. Remove the roast and set it aside. In the same pot, add the chopped onion and garlic, sautéing until softened.
  5. Add the carrots and potatoes, stirring to combine.
  6. Return the roast to the pot, then pour in the beef broth and red wine.
  7. Sprinkle the thyme and rosemary over the top.
  8. Cover the pot and transfer it to the preheated oven.
  9. Cook for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
  10. Remove from the oven and let it rest for a few minutes before slicing and serving.
