12 corn tortillas
1 lb ground beef or turkey
1 can (15 oz) black beans, drained and rinsed
2 cups salsa
2 cups shredded cheese (cheddar or Mexican blend)
1 cup corn (frozen or canned)
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
Add black beans, corn, salsa, cumin, chili powder, salt, and pepper to the meat. Stir to combine and heat through.
In a baking dish, spread a thin layer of the meat mixture on the bottom.
Layer 4 tortillas over the meat mixture, followed by a layer of cheese.
Repeat the layers (meat mixture, tortillas, cheese) until all ingredients are used, finishing with a layer of cheese on top.
Cover with foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Let it cool for a few minutes before slicing and serving.
Notes
For a vegetarian version, substitute the meat with additional beans or vegetables.
Feel free to add toppings like sour cream, avocado, or cilantro before serving.
