  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking dish with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the baking dish.
  3. Bake for 10 minutes. Let cool slightly.
  4. Beat cream cheese and 3/4 cup sugar until smooth. Add pumpkin puree, eggs, vanilla, pumpkin pie spice, and salt. Mix well.
  5. Pour filling over crust. Bake for 30-35 minutes until set.
  6. Cool completely before slicing.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Chill bars for at least 2 hours for best texture.
  • Store in the refrigerator for up to 5 days.
