Quesadillas

Quesadillas are a delicious Mexican dish made with tortillas filled with cheese and other ingredients, then grilled to perfection.

Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked chicken, shredded (optional)
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onions and bell peppers, sauté until softened.
  3. Place one tortilla in the skillet, sprinkle half of the cheese on one half of the tortilla.
  4. Add cooked chicken, sautéed vegetables, and top with the remaining cheese.
  5. Fold the tortilla in half and cook until golden brown, about 2-3 minutes on each side.
  6. Remove from skillet, slice into wedges, and serve with salsa or guacamole.
