Roasted Butternut Squash Mash

A creamy and flavorful side dish made from roasted butternut squash.

  • 1 medium butternut squash (about 2 lbs)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter or dairy-free alternative
  • 1/4 tsp ground cinnamon (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut butternut squash in half lengthwise and scoop out seeds.
  3. Brush cut sides with olive oil and season with salt and pepper.
  4. Place squash cut-side down on baking sheet and roast for 45-50 minutes until tender.
  5. Scoop flesh from skin and mash with butter and cinnamon.
  6. Serve warm.

  • Choose squash with firm, unblemished skin.
  • For smoother texture, blend mashed squash briefly.
  • Store leftovers in airtight container for up to 4 days.
