  • 1 cup cherry tomatoes, halved

  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
  3. Spread the cauliflower on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
  5. In a large bowl, combine the roasted cauliflower, cherry tomatoes, red onion, parsley, and feta cheese.
  6. In a small bowl, whisk together the lemon juice and balsamic vinegar.
