Smoked paprika sweet potato bowls are a delicious and nutritious dish featuring roasted sweet potatoes, black beans, and a creamy avocado sauce.

  • 2 large sweet potatoes
  • 1 tablespoon smoked paprika
  • 1 can black beans, drained and rinsed
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with smoked paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. While the sweet potatoes are roasting, prepare the avocado crema by blending the avocado, Greek yogurt, lime juice, salt, and pepper until smooth.
  5. Once the sweet potatoes are done, assemble the bowls by adding a layer of black beans and topping with the avocado crema.
  6. Garnish with fresh cilantro and serve warm.
