  • 100g sourdough starter

Instructions

  1. In a large bowl, mix the bread flour and water until no dry flour remains.
  2. Add the sourdough starter and salt, and mix until fully incorporated.
  3. Cover the bowl with a damp cloth and let it rest for 30 minutes.
  4. Perform a series of stretch and folds every 30 minutes for the next 2-3 hours.
  5. Shape the dough and place it in a proofing basket.
  6. Let the dough rise for 4-6 hours at room temperature or overnight in the fridge.
  7. Preheat the oven to 230°C (450°F) with a Dutch oven inside.
  8. Carefully transfer the dough to the hot Dutch oven, score the top, and cover.
  9. Bake for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes until golden brown.
  10. Let the bread cool on a wire rack before slicing.
