  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, soak the chicken pieces in buttermilk for at least 2 hours or overnight.
  2. In another bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Remove the chicken from the buttermilk, allowing excess to drip off, then dredge each piece in the flour mixture, ensuring an even coating.
  4. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  5. Fry the chicken pieces in batches for about 15-18 minutes, or until golden brown and cooked through, turning occasionally.
  6. Remove the chicken and place it on a wire rack to drain excess oil.
  7. Let the chicken rest for a few minutes before serving.
