Southwestern Chili

A hearty and flavorful Southwestern Chili that combines beans, vegetables, and spices for a delicious meal.

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, garlic, and bell pepper; sauté until softened.
  3. Add ground beef and cook until browned.
  4. Stir in chili powder, cumin, paprika, salt, and pepper.
  5. Add black beans, kidney beans, diced tomatoes, and beef broth.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Serve hot, garnished with your choice of toppings.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • Adjust the spice level by adding more or less chili powder.
  • This chili can be made ahead of time and tastes even better the next day.
