Spinach and Cheese Stuffed Portobello Mushrooms

  • 4 large portobello mushrooms
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the portobello mushrooms and remove the stems.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add chopped spinach and cook until wilted.
  5. In a bowl, combine the sautéed spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and pepper.
  6. Stuff each portobello mushroom cap with the cheese and spinach mixture.
  7. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly.
