strawberry shortcake cups

Strawberry shortcake cups are a delightful dessert that combines fresh strawberries, whipped cream, and cake in a convenient cup format, perfect for any occasion.

Ingredients

Scale
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package of shortcake or sponge cake, cut into cubes

Instructions

  1. In a bowl, combine sliced strawberries and granulated sugar. Let them sit for about 30 minutes to release their juices.
  2. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  3. In serving cups, layer the cake cubes, followed by a layer of strawberries, and then a layer of whipped cream.
  4. Repeat the layers until the cups are filled, finishing with whipped cream on top.
  5. Garnish with additional strawberries if desired and serve immediately.

Notes

  • For a lighter version, you can use low-fat whipped cream.
  • These cups can be prepared a few hours in advance; just keep them refrigerated until serving.
  • Feel free to substitute strawberries with other berries for a mixed berry shortcake.
