  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup sugar substitute (like stevia or erythritol)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, applesauce, eggs, and vanilla extract.
  3. In another bowl, combine the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, salt, and sugar substitute.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
