Delicious and healthy sweet potato brownies that are rich in flavor and satisfy your sweet cravings.

Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup almond butter
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed sweet potatoes and almond butter until smooth.
  3. Add cocoa powder, honey or maple syrup, vanilla extract, baking powder, and salt. Mix well.
  4. If using, fold in the dark chocolate chips.
  5. Pour the batter into a greased baking dish and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool before cutting into squares and serving.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • These brownies can be frozen for up to 3 months.
