Sweet Potato Kale Salad

A nutritious and flavorful sweet potato kale salad that’s easy to make and packed with vitamins.

Ingredients

  • 2 medium sweet potatoes, diced
  • 4 cups kale, chopped
  • 1/4 cup olive oil
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup dried cranberries
  • 1/4 cup roasted pecans, chopped
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 2 tbsp olive oil, maple syrup, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes, stirring halfway.
  4. In a large bowl, massage kale with remaining olive oil until softened.
  5. Add roasted sweet potatoes, cranberries, pecans, and feta cheese.
  6. Drizzle with apple cider vinegar and toss to combine.
  7. Serve immediately or refrigerate for up to 2 days.
