  • 2 lbs pork shoulder, thinly sliced
  • 1/4 cup achiote paste
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 12 corn tortillas
  • 1 cup diced pineapple
  • 1/2 cup chopped onion
  • 1/2 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. In a bowl, mix the achiote paste, orange juice, pineapple juice, garlic, cumin, oregano, salt, and pepper.
  2. Add the sliced pork to the marinade and let it sit for at least 2 hours, preferably overnight.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the marinated pork until it is well browned and cooked through, about 8-10 minutes.
  5. Remove the pork from the heat and let it rest for a few minutes before slicing it into small pieces.
  6. Warm the corn tortillas on the grill or in a skillet.
  7. Assemble the tacos by placing the sliced pork on the tortillas and topping with diced pineapple, onion, and cilantro.
  8. Serve with lime wedges on the side.
