Tahini Lemon Kale Caesar

A refreshing and healthy twist on the classic Caesar salad, featuring tahini and lemon dressing over kale.

Ingredients

Scale
  • 1 bunch of kale, washed and chopped
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup nutritional yeast (optional)
  • Croutons for topping (optional)

Instructions

  1. In a large bowl, combine the chopped kale with a pinch of salt and massage it for a few minutes until it softens.
  2. In a separate bowl, whisk together tahini, lemon juice, olive oil, minced garlic, salt, and pepper until smooth.
  3. Pour the tahini dressing over the massaged kale and toss to coat evenly.
  4. If using, sprinkle nutritional yeast over the salad and toss again.
  5. Serve topped with croutons if desired.

Notes

  • For a creamier dressing, add a little water to the tahini mixture.
  • Feel free to add other toppings like cherry tomatoes or avocado.
