  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 cup chopped green onions
  • 1/2 cup shredded carrots
  • 1 head of butter lettuce
  • Chopped peanuts for garnish

Instructions

  1. In a skillet, cook the ground chicken over medium heat until browned.
  2. In a bowl, mix together peanut butter, soy sauce, honey, rice vinegar, and sesame oil.
  3. Add the sauce to the cooked chicken and stir until well combined.
  4. Remove from heat and stir in green onions and shredded carrots.
  5. Wash and separate the lettuce leaves.
  6. Spoon the chicken mixture into each lettuce leaf.
  7. Garnish with chopped peanuts before serving.

Notes

  • For a spicier version, add red pepper flakes to the chicken mixture.
  • These wraps can be made ahead of time; just store the chicken mixture separately from the lettuce.
