Thai Peanut Sweet Potato Noodles

A delicious and healthy dish made with sweet potato noodles and a creamy Thai peanut sauce.

Ingredients

  • 8 oz sweet potato noodles
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 cup water (to thin sauce)
  • Chopped green onions for garnish
  • Chopped peanuts for garnish

Instructions

  1. Cook the sweet potato noodles according to package instructions and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, honey or maple syrup, rice vinegar, sesame oil, garlic, ginger, and water until smooth.
  3. In a large pan, combine the cooked noodles and peanut sauce over medium heat, stirring until well coated.
  4. Serve immediately, garnished with chopped green onions and peanuts.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • This dish can be served warm or cold.
