1 cup milk
1 large egg
2 tablespoons melted butter
1/2 cup ube puree
Instructions
In a bowl, mix the flour, sugar, baking powder, and salt.
In another bowl, whisk together the milk, egg, and melted butter.
Combine the wet and dry ingredients until just mixed.
In a separate bowl, mix the ube puree with a little bit of the pancake batter.
Heat a non-stick skillet over medium heat and pour in some pancake batter.
Swirl in the ube mixture to create a marbled effect.
Cook until bubbles form on the surface, then flip and cook until golden brown.

Notes
For a richer flavor, use coconut milk instead of regular milk.
