Instructions

  1. Flatten the veal cutlets between two sheets of plastic wrap using a meat mallet.
  2. Season the flour with salt and pepper, then dredge the veal cutlets in the flour.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the veal cutlets to the skillet and cook for about 2-3 minutes on each side until golden brown.
  5. Remove the veal from the skillet and set aside.
  6. In the same skillet, add white wine, chicken broth, lemon juice, and capers, scraping up any browned bits from the bottom.
  7. Return the veal to the skillet and simmer for an additional 2-3 minutes.
  8. Garnish with fresh parsley before serving.
