  • 2 cups vegetable broth
  • 1 cup spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the pasta, diced tomatoes, onion, garlic, vegetable broth, and Italian seasoning.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat and simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked and the liquid is mostly absorbed.
  4. Stir in the spinach and cook for an additional 2 minutes until wilted.
