  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

  • 8 small corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large bowl, combine cooked lentils, black beans, corn, cumin, chili powder, salt, and pepper.
  2. Heat the corn tortillas in a skillet over medium heat until warm.
  3. Spoon the lentil and bean mixture onto each tortilla.
  4. Top with sliced avocado and fresh cilantro.
  5. Serve with lime wedges on the side.
