Vegetarian Lasagna

A delicious and hearty vegetarian lasagna that offers a delightful twist on the traditional recipe, packed with layers of vegetables and cheese.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onion, garlic, zucchini, and bell pepper until softened.
  4. Add chopped spinach to the skillet and cook until wilted. Season with salt and pepper.
  5. In a baking dish, spread a layer of marinara sauce on the bottom.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta cheese, half of the vegetable mixture, and a third of the mozzarella cheese.
  7. Repeat the layers, finishing with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  9. Let it cool for a few minutes before slicing and serving.

Notes

  • Feel free to add other vegetables like mushrooms or eggplant.
  • For a gluten-free version, use gluten-free lasagna noodles.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
