  • 2 medium zucchinis, diced
  • 1 medium eggplant, diced
  • 1 bell pepper, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 ripe tomatoes, chopped
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, sauté until translucent.
  3. Add the eggplant and cook for about 5 minutes.
  4. Stir in the bell pepper and zucchini, cooking for another 5 minutes.
  5. Add the tomatoes, thyme, basil, salt, and pepper.
  6. Cover and simmer for 20-25 minutes, stirring occasionally.
  7. Serve warm, garnished with fresh herbs if desired.
