  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic, zucchini, and bell pepper; cook for another 5 minutes.
  4. Add diced tomatoes, vegetable broth, basil, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in spinach or kale and cook until wilted.
  7. Serve hot and enjoy!
