Ingredients

  • 1 lb ground turkey
  • 1 cup finely chopped vegetables (carrots, bell peppers, onions)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 head of cauliflower
  • 2 tbsp butter
  • 1/4 cup cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground turkey, chopped vegetables, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined and shape into a loaf.
  4. Place the meatloaf in a baking dish and bake for 45-50 minutes.
  5. While the meatloaf is baking, steam the cauliflower until tender.
  6. In a bowl, mash the steamed cauliflower with butter and cream until smooth.
  7. Once the meatloaf is cooked, let it rest for 10 minutes before slicing.
  8. Serve the meatloaf with a side of mashed cauliflower.

  • Feel free to add your favorite herbs for extra flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish can be frozen for up to 2 months.
