  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground chicken or turkey
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and ground chicken or turkey, cooking until the meat is browned.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the heavy cream and broken lasagna noodles, cooking until the noodles are tender.
  5. Add ricotta cheese, spinach, Italian seasoning, salt, and pepper. Stir until well combined.
  6. Remove from heat and stir in mozzarella and Parmesan cheese until melted.
  7. Serve hot, garnished with additional cheese if desired.
