Zucchini Boat Ground Turkey Tacos

A delicious and healthy twist on traditional tacos, using zucchini boats filled with seasoned ground turkey.

  • 4 medium zucchinis
  • 1 lb ground turkey
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1 cup shredded cheese
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, cook the ground turkey over medium heat until browned.
  4. Add the diced onion and garlic, cooking until the onion is translucent.
  5. Stir in the diced tomatoes, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes.
  6. Fill each zucchini boat with the turkey mixture and top with shredded cheese.
  7. Place the zucchini boats in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, removing the foil for the last 10 minutes to brown the cheese.
  9. Garnish with fresh cilantro before serving.

Notes

  • Feel free to add other toppings like avocado or sour cream.
  • For a spicier kick, add jalapeños to the turkey mixture.
  • These can be made ahead of time and stored in the refrigerator before baking.
