1 can (15 oz) black beans, rinsed and drained
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
Preheat the oven to 400°F (200°C).
Wash and pierce the sweet potatoes with a fork.
Bake the sweet potatoes in the oven for about 45 minutes or until tender.
In a skillet, heat olive oil over medium heat and add black beans, cumin, chili powder, salt, and pepper.
Cook for about 5-7 minutes until heated through.
Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
