  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes in the oven for about 45 minutes or until tender.
  4. In a skillet, heat olive oil over medium heat and add black beans, cumin, chili powder, salt, and pepper.
  5. Cook for about 5-7 minutes until heated through.
  6. Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
  7. Top the sweet potatoes with the black bean mixture and garnish with fresh cilantro.
