  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1 cup sliced mushrooms
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge the chicken in flour, shaking off the excess.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Add the chicken and cook until golden brown on both sides, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the mushrooms and sauté until they are browned.
  7. Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan.
  8. Return the chicken to the skillet and simmer for about 10 minutes, until the chicken is cooked through.
  9. Stir in the butter until melted and the sauce is slightly thickened.
  10. Garnish with fresh parsley before serving.

Notes

  • For a thicker sauce, you can add a cornstarch slurry.
  • Serve with pasta or mashed potatoes for a complete meal.
  • Make sure to use a good quality Marsala wine for the best flavor.
