4 large bell peppers
2 cups cottage cheese
1 cup chopped fresh herbs (such as parsley, basil, and chives)
1 cup shredded cheese (optional)
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds.
In a bowl, mix together the cottage cheese, chopped herbs, garlic powder, salt, and pepper.
If using, stir in the shredded cheese.
Stuff the mixture into the prepared bell peppers.
Place the stuffed peppers in a baking dish and cover with foil.
Bake for 30-35 minutes, or until the peppers are tender.
Remove the foil and bake for an additional 10 minutes to brown the tops, if desired.
