Lentil and vegetable soup

A warm and nutritious lentil and vegetable soup that is perfect for cozy evenings.

Ingredients

  • 1 cup lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add lentils, diced tomatoes, vegetable broth, cumin, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  6. Adjust seasoning as needed and serve hot.
