  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  3. Place the cod fillets in a baking dish and pour the olive oil mixture over them.
  4. Top the cod with cherry tomatoes and black olives.
  5. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
  6. Serve hot with a side of vegetables or a salad.
