Quinoa and black bean bowl

A nutritious and delicious quinoa and black bean bowl packed with protein and fiber, perfect for a healthy meal.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a large bowl, combine cooked quinoa, black beans, corn, and diced bell pepper.
  5. Add lime juice, cumin, salt, and pepper, and mix well.
  6. Top with diced avocado and garnish with fresh cilantro.
  7. Serve immediately or refrigerate for later use.

Notes

  • This bowl can be served warm or cold.
