Instructions

  1. In a saucepan, heat the broth and keep it warm over low heat.
  2. In a large skillet, heat olive oil and butter over medium heat.
  3. Add the chopped onion and garlic, sauté until translucent.
  4. Add the Arborio rice, stirring for 1-2 minutes until lightly toasted.
  5. Pour in the white wine and cook until absorbed.
  6. Gradually add the warm broth, one ladle at a time, stirring frequently until absorbed before adding more.
  7. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  8. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
  9. Serve hot, garnished with additional Parmesan if desired.
